After 3 Years of Planning, Weitsman Announces the Opening of Hidden Fish
In a culmination of three years of meticulous planning, construction, and chef auditions, Adam Weitsman is gearing up to unveil his latest culinary venture in Skaneateles. Hidden Fish, nestled at 7 Fennell St., promises a contemporary take on sushi and is slated for a grand opening in the second week of January. For Weitsman, a prominent figure as a scrap metal magnate and philanthropist, this marks his fourth restaurant venture in the Skaneateles area. Teaming up with Jeff Knauss, Vinny Lobdell, and Vinny’s son Noah, Weitsman expresses his anticipation for the forthcoming establishment. “It’s going to be truly exceptional,” remarked Weitsman, adding, “While the journey took longer than expected, our aim is nothing short of perfection.”
The culinary expertise behind Hidden Fish is led by Chef Joseph Tran, a notable addition to the team who relocated from San Diego. Weitsman discovered Chef Tran through a talent agency and praises his skills, describing him as “next level” and “worth the wait.” Chef Tran’s repertoire will feature signature sushi rolls and Asian-inspired delicacies, showcasing an array of globally sourced fish.
During a recent menu tasting session, the partners savored dishes like bluefin tuna (chu toro) from Baja, California, North Atlantic Faroe Island salmon, Yellowtail from Japan with a zesty sauce, and albacore tuna from the Pacific Northwest paired with spicy garlic oil. Jeff Knauss, expressing delight, described the experience as unparalleled, asserting, “This promises to be an elevated sushi affair for Upstate New York.” He continued, highlighting the fusion of Chef Tran’s culinary mastery with a unique ambiance, envisioning Hidden Fish as a standout destination within the local community.
For Weitsman, Hidden Fish marks his maiden venture into Asian cuisine, complementing his other successful eateries in the region. Notably, he revitalized The Krebs in 2009, emphasizing American cuisine with a focus on fresh, local ingredients. In April of 2019, he introduced The Elephant & the Dove, renowned for its upscale Mexican dishes and inventive beverages. Last June saw the launch of Clover’s, a diner affectionately named after his daughter, bridging the gap left by the closure of their cherished nearby breakfast spot.
As Skaneateles eagerly awaits the unveiling of Hidden Fish, the anticipation is palpable for what promises to be a culinary experience unlike any other in the area.
